SAVORY FRUIT-FILLED STUFFING

INGREDIENTS
8-10 cups cubed bread
½ stick butter
1 bunch fresh sage, minced
Salt and pepper
Sunny Fruit Organic Raisins, Tart Cherries, and Apricots
¾ cup minced onion
½ cup minced celery or fennel
½ cup minced carrot
Up to 2 cups chicken stock

Instructions:
Preheat oven to 375°F
Toss bread and half the sage in a bowl. Melt ¼ stick butter, pour over bread, and bake for 10 minutes until golden
Soak the Sunny Fruit in boiling water for 10 minutes, then drain
Melt remaining butter, sauté onion, celery, and carrot until soft. Add dried fruit and sage, cook for 2-3 minutes
Mix sautéed veggies and fruit with bread. Add stock to moisten and season with salt and pepper
Pour into a baking dish and bake uncovered for 30-40 minutes until golden
